In recent years, scientific research has shown that saffron and its constituents exhibit significant antioxidant properties. They have many other medicinal properties. Nowadays saffron along with a few other herbs, like turmeric (Curcuma longa) and ginger (Zingiber officinale), are added to some food products to increase their flavor.

Plant-derived phytochemicals have attracted the attention of chemists and pharmacologists owing to their various biological activities. Phytochemicals are secondary metabolites of plants and contain an aromatic ring with various biological and medicinal activities. Several diseases are treated by phytochemicals.
